Knife Making with Champion Knives

Join chef and knife-maker Hayden from Champion Knives and craft your own kitchen knife with a bespoke wooden handle and brass detailing.
In this one day session, you will start with a Champion Knives carbon steel blade of your choice, and adjust the profile if you desire. Then, you will choose your wood (or bring your own*) and assemble and fix the handle. After a break for lunch, you’ll then complete the shaping, sanding, burning, oiling and sharpening of your knife – leaving you with a one of a kind tool, that if well cared for, will last a lifetime.
There are four options of knives you can make. Choose your favourite from the list below, (see pictures in the gallery):
– Large chef – A large and versatile kitchen knife suitable for almost every task.
– Nakiri knife – An iconic vegetable knife, with a long and flat cutting edge. A must have addition to any kitchen knife collection.
– Petty knife – A moderately sized knife that is still a kitchen workshorse. Suitable for almost all jobs.
– Pairing knife – Small but mighty. Great for fine tasks, but enough blade for boning some meat, or just for a cook that prefers a small knife.
This is a beginner level class, so if you are interested in forging a blade from scratch, we can put you in touch with our tutor about other classes he runs.
*Dimensions required if bringing your own handle material – 140 x 40 x 10mm (2 pieces)
No prior experience needed. Classes are limited to 6 people and are suitable for ages 18 and over. Materials, tools, and a post-session beer or AF drink are all included.
